Zooey Deschanel Shares Her Green Summer Soup Recipe

Zooey Deschanel, star of 500 Days of Summer, is a huge fan of the season after falling under its spell as a kid at camp in upstate New York. The actress offers up tips to Self Magazine about how she enjoys the warm weather that include sprawling in the grass, reading a mystery novel in a hammock, and running around in the sprinklers. She also shares one of her favorite recipes for summer soup and it sounds so yummy!
Green Summer Soup
Ingredients
* 3 cups green peas (frozen and defrosted, or fresh—not canned)
* 2 cups vegetable stock or broth
* 3 mint leavesPreparation
Combine peas, stock and mint in a blender or food processor. You can adjust the proportion of peas to stock depending on your taste for viscosity. Heat in a pot. Season with salt and pepper. Serve in bowls. (This is important; soup should not be served on a plate!)The Skinny
